Working on that Winter coat…

I just returned from a lovely weekend in the Appalachian mountains. Mostly I read great books, played games with the family, took cold rainy hikes, and munched munched munched on ridiculously fatty and perfectly delicious foods in the name of building up my winter coat. All in all, it was lovely. And since it is officially the yummiest time of the year, I thought I’d share a few of my favorite winter recipes with you guys.

And yes, I am actually posting the food I made with recipes. This is a special occasion. (I’m a firm believer in “a little bit of this and a little bit of that”.)
Caramelized Butternut Squash Soup. 

A friend walked up to me after a church meeting one day and began to gush about this perfectly wonderful soup he was pretty sure I would love. I am happily endowed with the reputation of exploratory cook. People come to me when they have strange or foreign or just plain ol delicious recipes and food stories they want to share.

I was so excited about trying this soup that I pulled myself out of bed with stomach flu and a high fever to prepare it and then fell back down completely exhausted and unable to eat more than three bites. Pitiful, I know. But those three bites were delicious, and since I recovered from illness, I’ve made the soup two more times. NOM.

Upside Down Apple Gingerbread. 

Gingerbread and apples are two of my favorite things. Cake is wonderful too. Put them all together and this was a slam dunk delicious dish that I’ll probably make myself every time I have a birthday (and possibly for all those unbirthdays in between).
It is from smitten kitchen, my all time favorite source for recipes. Every single recipe I’ve used from this blog has been not just good, but unbelievably amazing. 
 While we are on the topic of building winter coats:
Perfected chocolate chip cookes. (and I mean PERFECT)
Clementine cake.  (for the gluten free among us)

  1. It is absolutely scrumptious. I highly highly recommend that you give it a go. (Although my mommy didn't like it, apparently it is a fairly spicy gingerbread. That is how I like mine, but people are different, you know. Consider yourself warned).
